L’Auberge de France bistro expands to Trenton

TRENTON – A small taste of France has come to Quinte West.

L’Auberge de France, Belleville’s French bistro, opened a second restaurant in downtown Trenton Wednesday.

The bistro will add more variety to an already diverse area for restaurants, said Nicolas Servel, the manager of Trenton’s newest restaurant and a native of Lyon, France.

“We figured it was a dynamic little place and we already had one in Belleville, so  we had to pick another town that was close enough. So Trenton made sense,” he said.

Servel said the restaurant opening was a relief after six months of organizing.

“We put a lot of work into it with renovations, and put some work into the equipment, and for the last few weeks every day there was a new surprise that kept delaying the stuff to be ready,” he said. “Finally we’re open. We’re excited and very happy about it.”

To make L’Auberge de France’s Trenton branch as successful as the original one in Belleville has been, he said, “We’ll keep on focusing on what we do right, which means getting good products to make good food for a good price.

“We are French and we’re proud of it.”
